Doesn't this look delicious? I'm on a health kick now post-baby, and have never had couscous in my life. It's pretty good, and surprisingly easy to make! I found this recipe in a RealSimple magazine, and it can be altered to have shrimp in it as well for all you seafood lovers out there. Yuck! ;)
I've said it before, but if I could pack up and move my entire family straight into the By The Barkers studio space, I would. Absolute heaven! As for our little one, he or she has been giving me strong, swift kicks - especially around bed time. Waves and ripples dance across my belly as I lay in bed waiting, watching. I'll admit, it's been difficult for Erick and I since we've decided to keep things a surprise as far as the gender. We were both so used to the feeling of knowing with Sofia that it's made this pregnancy a completely unique experience. My intuition keeps swaying back and forth wondering if this little one is a boy or girl, and judging by the way that I look, feel and eat, my best guess is that we have another little lady on the way. (Though, if you ask Sofia, she's already told us she thinks baby is a "bruh-der") !!! Mamas out there, was your intuition right? Any tell-tale signs or...
This looks delicious and I have most of the ingredients in my garden :) But I never try lemony recipes because I'm afraid it will be too overpowering for savory food. Thoughts??
ReplyDeleteIt was definitely pretty lemony, but the basil and cherry tomatoes evened it out with a 'fresh' taste. Couscous is pretty bland anyway in my opinion, so I thought the flavors worked well together! :D
ReplyDeletegood modifiers for couscous (i LOVE couscous): feta cheese, parmesan, cut up squash, tiny dried dates (very mediterranean... very "in"), parsley, your favorite seasoning... golden raisins, chick peas (SO good with the dates!), cucumbers (great for summer salads)
ReplyDeletei could really keep going. there's nothing that doesn't go well with couscous. fer realz.
Ooh, I like the squash idea. Chris and I have couscous as a side with a lot of dinners... but by itself or with a little seasoning I think it's still kind of boring. Imma try one of these ideas instead.
