Sometimes for lunch we're craving something warmer and heartier - especially as the temperatures begin to fall. This is super simple to throw together and most importantly, is absolutely customizable to whatever you happen to have on hand. (Always a plus, no?) We had some leftover bacon to cook, but I'm thinking this might be just as great without any meat at all: spinach and feta, apples and havarti? I know I've been trying to incorporate the all-mighty kale into our diet, and thankfully just about every way I've cooked it so far Sofia has really enjoyed. It is loaded with so many wonderful nutrients for grown-ups & littles alike!
Baked Eggs with Kale and Bacon
YOU WILL NEED:
• 4 large brown eggs
• 1/2 c half and half
• 1/2 c milk
• 1 cup cooked kale
• 1 shallot
• 1/2 c shredded parmesan cheese, divided.
• 4 strips of bacon, chopped. (save grease!)
• salt and pepper to taste
• olive oil for greasing pan
DIRECTIONS:
Preheat oven to 350º. Heat olive oil in a skillet and cook shallots and kale together until translucent and bright green. Meanwhile, have your bacon cooking in a separate skillet over med-high heat. Once bacon has cooked, chop into pieces and set aside to cool. Save a few tablespoons of grease. Add bacon grease to kale and shallots while cooking, then set aside to cool. In a large bowl, whisk together 4 eggs, salt and pepper, cream and milk. Fold in the chopped bacon, kale and shallots. Take two 5 ounce ramekins or tart pans and grease with any remaining olive oil. Pour in egg mixture, and top with shredded parmesan. Bake the ramekins on a cookie sheet in heated oven for approximately 40 minutes or until tops have turned golden. Serves two 5 ounce ramekin portions.

Yum! This looks so good! I've seen baked eggs floating around a lot recently, I'm thinking it's time I try it out too!

ReplyDeleteI love this! I remember reading a recipe for baked eggs (perhaps Ottolenghi?) and thinking I should do that, but this has given me the extra inspiration I needed! Beautifully photographed, as always. xx
ReplyDeleteA few years ago I pounced upon a baked egg recipe in a Bill Granger cookbook I had and cooked it so many times that I swore I would never eat baked eggs ever, ever again. But I think enough time has passed to bring it back into the rotation (sparingly, this time!). Lovely photos :)
